Sweet Potato Chips


Prep Notes

  • When the sweet potatoes are similar in size, they cook evenly in the oven
  • I used to cut the sweet potatoes using a mandolin (very thin chips), but I found that using a knife brings out better chips that do not burn in the oven!

Ingredients

  • 6 medium sweet potatoes
  • 2 tbsp olive oil
  • Sea salt, to taste
  • 1/2 tsp pepper
  • 1 tsp paprika
  • A pinch of cayenne pepper powder (optional)


Directions

  1. Heat the oven to 150 degrees C
  2. Wash the sweet potatoes with a brush until all the dirt has come off
  3. Using a sharp knife, cut into thin discs (the thinnest you can using a knife)
  4. In a bowl, add the sweet potato discs, olive oil and spices and mix thoroughly using hands
  5. Arrange the discs on a baking sheet on the oven baking tray. Make sure they are only one layer. 
  6. Bake at 150 degrees C for 40 minutes or until slightly crispy and the edges are slightly browned. 

Tip: If you're making this recipe for the first time, keep close attention to the sweet potatoes after 30 minutes. Take note of the best time/consistency combination according to your oven.
