Ingredients

1 cup split green peas (or brown lentils) 

Half a cup quinoa

4 medium tomatoes

2 yellow onions

6 cloves garlic

1 tsp cumin

sea salt - black pepper

2 tablespoons olive oil

1 tablespoon white or apple cider vinegar


Directions

  • Soak green peas and quinoa separately for at least 1 hours (more recommended) 
  • Boil split green peas until soft (approximately 30 minutes) - Make sure there is enough water after it's cooked and add half a teaspoon cumin. Keep skimming off the foam that forms in the first 15 minutes
  • Add quinoa, and simmer while covered
  • Meanwhile, process the onions and 4 cloves garlic in a food processor
  • Add 1 tbsp olive oil to a pan and turn on to low-medium heat then add the onion and garlic and stir for a minute
  • When they turn brown, add a little water and stir until they become darker brown
  • Add the onion mixture to the peas and quinoa, add the remaining 1 tsp cumin, and sea salt to taste
  • Cover and cook for 10 more minutes until all the flavors blend together

Tomato sauce

  • Blend the tomatoes in a food processor (I use the same one I used above without cleaning :)
  • Add 1 tbsp olive oil to a small sauce pan and add 2 cloves garlic. Stir until fragrant.
  • Add blended tomatoes, sea salt and pepper and boil on low heat for 10 minutes
  • Turn off the heat and add the vinegar
