Banana Bread

Ingredients

  • 2 ripe bananas
  • 1/4 cup homemade peanut butter
  • 1/4 cup coconut oil
  • 2 tablespoons coconut milk
  • 1/4 cup honey or maple syrup
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 2.5 tablespoons coconut flour
  • 1.5 teaspoons baking soda
  • Optional: 1 teaspoon cinnamon powder
  • 3/4 cup raisins 

P.S. As an alternative, I sometimes use 1 cup of frozen blueberries instead of the raisins. In that case, replace the vanilla with the zest of 1 lemon. 

Directions

  1. Preheat oven to 180 degrees C. 
  2. In a bowl, add almond flour, coconut flour, and baking soda. 
  3. Combine all wet ingredients in a food processor. 
  4. Add the dry ingredients to the wet ingredients and mix until no clumps remain. 
  5. Fold in the raisins or the blueberries. 
  6. Line 20x10 cm loaf pan with parchment paper and pour the batter. 
  7. Bake for 25 minutes. Cover with a pyrex lid for another 25-30 minutes until a toothpick inserted in the middle comes out clean. 
  8. Remove and leave to cool completely before cutting.
